The hidden Italian!

Gioja is in a rural setting in Penestanan, Ubud. You can dine inside, or al fresco by the pool, in their very rural setting. The cuisine is Italian with a twist. Many standard favourites and a few new creations, but all very Italian. A nibble to start? Try a chichetti [small bite]. The Squid Ink Cracker combines seabass tartare with wasabi mayo, the Spanish Cracker, baba ghanoush with fried curry leaves and hibiscus. The Gnocco Fritto is filled with truffle mousse. The starters explore new tastes. Steak Tartare uses Wagyu but with truffle mayo and garden herbs. A Carpaccio of Red Snapper is with radish, watercress and raspberry jel. Prosciutto e Melone combines compressed melon, parma ham, hazelnuts and parmesan. The pasta is headed by a 24 layer vegetarian Lasagna. The Ravioli is stuffed with kale and parmesan, walnuts and porcini mushroom. Gnocchi is just traditional, with butter and sage. The Small Bites include a Squid Ink Cracker [seabass tratare with wasabi mayo and pickled ginger], whilst the Spinach Cracker combines baba ghanoush, fried curry leaves and hibiscus. Mains can be Black Cod, Butterfish [kaffir lime sauce] or Octopus. Meats are Black Angus, Lamb Leg or Pork Belly. For dessert a Tutti Frutti, compressed exotic fruits, black banana ice cream, strawberry mousse, bali citrus and butter biscuit.
